  • 190g graham cracker crumbs
  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • Juice of 2 lemons
  • 1 lb strawberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. For the crust, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar, salt, vanilla essence, followed by eggs one at a time.
  4. Mix in heavy cream and sour cream until combined. Gently fold in cornstarch and lemon juice.
  5. Pour the filling over the crust and bake for 60–75 minutes until set around edges.
  6. For the compote, cook chopped strawberries with sugar, cornstarch, and lemon juice until thickened then cool completely.
  7. After cooling the cheesecake gradually in the oven, pour compote over it and refrigerate for at least four hours or overnight before serving.
