  • 9 stalks asparagus (or broccolini/green beans)
  • 12 slices thick-cut turkey bacon
  • 1/2 cup maple syrup (or honey/agave)
  • 2 tablespoons apple cider vinegar (or white vinegar/lemon juice)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and peel the carrots and parsnips; cut into sticks about 4 inches long. Trim asparagus ends.
  3. Wrap each vegetable stick tightly with turkey bacon and place on a lined baking sheet.
  4. In a bowl, whisk together maple syrup, apple cider vinegar, cumin, ginger, and salt.
  5. Brush half of the glaze over the wrapped vegetables before baking.
  6. Bake for about 25 minutes until turkey bacon is crispy; brush on remaining glaze halfway through.
  7. Allow to cool slightly before serving.
