  • 8 oz linguine pasta (or spaghetti)
  • 1 lb chicken thighs, cut into strips
  • 1 large carrot, cut into thin strands
  • 12 oz mushrooms, sliced or quartered
  • 1 1/2 cups medium broccoli florets
  • 1/2 red pepper, cut into thin strands
  • 3 Tbsp oil
  • 3 garlic cloves, grated
  • 1½ tsp ginger, grated
  • 1 cup chicken broth
  • 1/3 cup soy sauce
  • 1/4 cup honey

Instructions

  1. Cook the pasta al dente according to package instructions with a dash of salt and 1 tsp oil. Drain and keep warm.
  2. In a small bowl, whisk together the sauce ingredients: oil, garlic, ginger, chicken broth, soy sauce, honey, and corn starch.
  3. Prepare vegetables by cutting them as indicated.
  4. Heat 1 Tbsp oil in a large skillet over medium-high heat. Add chicken strips and sauté until cooked through. Season with salt and pepper before removing.
  5. Sauté vegetables in the same skillet with remaining oil until tender.
  6. Add the butter and prepared sauce to the skillet; bring to a gentle boil.
  7. Return pasta and chicken to the skillet; mix thoroughly until heated through.
